Apple, Walnut and Arugula Salad


Prep Time:   30 min   Total Time:  30 Minutes  Yield:  Serves 8

INGREDIENTS

2/3 cups of coarsely chopped walnuts

4 teaspoons grainy mustard

6 tablespoons apple cider vinegar

Course salt and ground pepper

2 teaspoons honey

2 shallots, minced

1/2 cup extra-virgin olive oil

1/2 cup fresh mint leaves, coarsely chopped

4 ounces crumbled soft goat cheese

3-4 red apples cored, quartered and each quarter cut into 8 wedges

7 ounces of baby arugula

DIRECTIONS

1. Over medium-low heat in a small skillet, toast the walnuts about 7 minutes until fragrant and crisp.

2. In a large bowl whisk together the honey, vinegar, shallot and mustard until combined well. Whisk in the oil until thick. Season with salt and pepper.

3. Add arugula and apple and toss to coat. (Dressing can also be served on the side ) Sprinkle with cheese, mint and walnuts.
